Sauvignon Blanc

2017 Caythorpe Family Estate Marlborough Sauvignon Blanc

Viticulture and Winemaking

The 2017 growing season was characterised by a cool spring and warm summer. Two and three cane vertical shoot positioned (VSP) vines were carefully managed to deliver balanced yields with intensity of flavours. The fruit was assessed daily during the ripening period to identify the optimum sugar/acid balance and desired flavour characteristics for harvest. A single, carefully selected parcel was harvested early April; the fruit immediately pressed to limit skin contact and fermented in cool stainless steel to retain desired fresh fruit flavours. After a period sitting on lees, the finished wine was bottled in August 2017.
